Due to its A-crystal form characteristics, it can improve the beating effect of cake batter and light cream.

     It can improve the compatibility of oil and water, enhance emulsification, inhibit crystallization, improve the ability of beating and foaming, increase foam stability, improve the tissue structure, taste and flavor of the product, and extend the storage period.

    Sponge cake

    When used together with monoglycerides, the number of bubbles increases, the volume of bubbles decreases, the produced foam becomes firmer, the stability of the batter improves, and the density of the sponge body decreases, making the texture of the sponge cake softer.

    Biscuits and puffed snacks

    It emulsifies the oil, making it easier for gluten to absorb. During the baking process, it forms a porous sponge-like loose structure in the central layer, improving the looseness and texture of the product and extending its shelf life.
