Citric Acid Fatty Acid Glyceride (CITRE)

Citric acid fatty acid glyceride exhibits an amphiphilic molecular structure and is an anionic surfactant. It appears as a white to pale yellow powder or granular solid, with an HLB value of 6–8, and possesses functions such as emulsification, dispersion, chelation, wetting, stabilization, inhibition of starch retrogradation, control of fat aggregation, antioxidant activity, and synergistic antioxidant effects.

Application areas: Dairy products and dairy beverages, baked goods (cakes, bread), fat-based products, margarine, and more. (This product is also widely used in the pharmaceutical, cosmetic, feed, and chemical industries.)
